You can report them if the trash talk gets too serious, or you can disable chat. Though there are many who are pleasant to chat to I wouldn't say bullet chess is conducive to chatting. As far as chat after the game, you can just ignore most things and move on, or like I said report if necessary. I'd like to think the majority of people will NOT call you names.
I do find that there are not a very large amount of people who enjoy rematches but this could be for a number of reasons.

most chess players who are arrogant and rude are the low and the not-so-high rated ones!!
they feel intimidated when a player with a higher rating shows disagreement with their opinions related to chess..when nobody even brings up their low/lower ratings, they bring up your rating basically implicitly saying you look down on them just because your rating is higher
they are easy to get offended just because someone says there are 2 options if you suck at chess, to get better and to leave... they think they mock them, when they actually only tell them they suck at chess without even further explanation... they so spoiled, are too lazy to write their issues but expect experienced and stronger players to speak much and nice words in responses. they keep calling others KIDS when they are being childish (nasty) themselves
if people are honest... how many times they encounter rude and arrogant high rated players in chat and forum...compared to the low ones? i have met so many here..and most of them have ratings below 2000
