I'd say, off the top of my head, a nice merlot or chianti probably would be best since squirrel has a bit of dark meat and typically you're enjoying a hearty meal. Squirrel, vegetables, maybe some dumplings ... add a nice red and you'll be fine.

Me personally a Shiraz.
