Well, it's common, especially at the GM level, so as a fan it can be boring to see. Although, I think all GM chess is pretty interesting

I think GM chess is interesting too.

There's a lot of types of positions you'll need to play. Something against the Berlin Wall, Archangelsk, Moller, Marshall Attack, Steinitz, and others but what's most important is learning pawn structures, especially the c5-d6-e5 vs. c3-d4-e4 listed in Soltis' book on it. Also queenless middlegames against the Berlin Wall.

The Ruy Lopez has it all: Very quiet positional games, wild tactical messes, deep positional sacrifices, extremely subtle strategical themes... It is the king of all openings.
Do you play it often?

3...Nf6 just leads to equality, so both sides have winning chances and black might not want a queenless middlegame even if it's the fastest route to equality.
