In live chess, just pick whatever time control you are comfortable with. There are 14 choices now, I think, from 30 seconds (total, for all moves of the game, which is just insanity) to 45 minutes with 45 seconds added for each move made.
I believe they are sorted by popularity. 10 minutes with 0 seconds added is the most popular.
