Time!

I mate my opponent in the last second, WHILE my flag falls, and he claims the victory, pointing at the clock. Who wins here? I can't find anything about this in the Fide rules. Anyone? Thanks!!

You have 1 minute left, your opponent has only 20 seconds, so he hurriedly makes his move and incidently knocks over some other pieces. You wait politely until he has put every piece back where it belongs and make your move. This repeats itself a couple of times, and suddenly YOU are the one in time trouble! And he wins on time... What to do? (This is starting to look like a professional trick to me?)

This is covered.

Checkmate immediately ends the game. No need to press the clock. So if you released your hand from your piece before the flag fell you win the game. If the flag falls before you release your hand your opponent wins (subject to him having enough mating material on the board, else it is draw.).

Proving what happened is another matter.

Checkmate is better than time

They are not allowed to press the clock until all the pieces are straight. If they do it is an illegal move because for example play Knight- on the floor is an illegal move

When he moved and knocked over the pieces, did you hit your clock again so he could fix the pieces while he was on *his* clock?
