You have to use the "Create new seek" button at the bottom of the top right window.
By doing this, you may set your own rules and wait for some challenger.
In the "Live Chess" portion of the site, where you are already apparently playing, you can click "create seek" and in the box that comes up, there is a box that allows you to set whatever time limit you would like for the game (Im a fan of 30 minute games myself).
If you want even longer games (where each player gets one or more days to make their moves), you can start those by clicking Play -> Online chess, then clicking "create seek" or "open seeks" and finding a game that way.
