Time perception while playing chess

Something I've always found interesting.

I can watch some GM's play blitz or even bullet and get a reasonable feel for what's going on.
The GM's in question too for example if they are streaming seem to have the ability to discuss a decent amount of thoughts, plans and lines while they are playing and with only ten seconds left on the clock.

Now I have a go myself.
Suddenly time in a 3 minute game absolutely flies away. I blink and half my time is gone.

Observing others I was able to figure out fairly accurately what's going and spot mistakes of players much stronger than myself.
But now that I'm at the controls a 1 minute game turns to absolute chaos. I make gigantic obvious blunders.

Why?

Anyone else experience this?

Kinda cool in a "time is a construct of the mind" type of way right?

Does it get better as we improve? Should we somehow try to relax and how?

It does and it doesn't get easier.  I've played the White side of the Maroczy Bind so many times, I can hold a conversation and still play at 90% of my strength pretty quickly, at least for the first 15-20 or so moves.  If I tried this in other positions, though, my playing strength would decrease sharply.  Add in blitz time controls and I'd leave hanging pieces and my dignity all over the board.

GMs seem to be superhuman in this regard.  I've watched Simon Williams play blitz, where he will waste 20sec talking to the camera, make bizarre sound effects and tell jokes, and then he plays a combination that would take me 5min to work out, all without missing a beat.  It's awe-inspiring, really.

I'm sure it gets easier as you get better, but I think it takes a tremendous amount of specific practice.  I'm much stronger today than I was ten years ago, but I've played virtually no blitz, so my blitz skills remain poor.  Similarly, many GMs who give blitz commentary, like Simon Williams, have been doing it for a long time, so it's easier for them ... and of course it helps that they are strong players to begin with.
