Understanding annotated chess games; opening given

Hi, I was just wondering a couple things:

(1) Why is it that when I'm going over annotated games in my books it will say a particular opening for white or black (mostly black)?

and,

(2) is there a way to determine who won the point without having to find it at the end of the annotation? Because I thought my first question actually answered this second question.
