Similar for me, except my opponents hanging...themselves..before the game, and me winning by forfeit when they don't show up.
It's the only way I can win. :-(

At her strength, I’m not sure that GM games are the best way to progress. Way too complicated.
At 1200, she probably hangs pieces. So I would recommend training tactic and endgames, as many beginners are not aware of the basics.
Analysing games is also interesting, but only with a training buddy. At 1200, you aren’t good enough to analyse yourself with the engine. The engine won’t explain its moves

GM games would be a great way for her to progress. They just need to be explained right. Yasser Seirawan has a great book called Winning Chess Brilliancies, where he goes into detail annoting grandmaster games. But he explains it so everyone can understand and you learn a lot. Logical Chess Move by Move is the same way. She can also watch GothamChess on Youtube, where he goes over all kinds of Grandmaster games, but he will explain them in a way any 1200 could benefit from. And he will make it fun.
Tactics training has helped me a LOT. chess.com is my main platform but the puzzles on here are garbage, I'd suggest doing general puzzles on lichess and occasionally ones for specific skillsets, depending on what you need to work on the most.
