You don't have to wake your opponent up of course, but I wonder what happens if you go wake up someone elses opponent. Does that count as assisting and break the rules?

It should. Similar to pointing out that someone has flagged. However, no one could complain if you loudly sneezed.
I have fallen asleep, waiting for my opponent to move, but I always wake up as soon as they move.
