Even with only seven pieces, endgames are hard for computers to see all the way through. A large evaluation change is not uncommon when it is given enough time to think.
The position is lost for black according to the tablebases.
Apparently, when the Knight was still on the board, Stockfish believed that Black had a chance in the game, but once the pieces were gone, Black had no chance.
This follows the standard endgame wisdom: "When you are behind in material, exchange Pawns, not Pieces."
