I like tChess Pro (actually it's on my ipod touch, I don't have an ipad). It's a very nice, clean, simple interface. I think it cost me $7. You can try the tChess Lite for free.

I have tChess Pro because it allows you to open PGN's. I also have Shredder which is pretty nice and give a good game (very good :0)) if shredder opened PGN's then I'd just use that.
