To go from 500-1000 as someone who got 1000 elo in only 3 months I say play something solid that you can basically rinse and repeat every time you play, I suggest the London or the jobava London for something with more traps and combative, those two openings for white are easy to learn and usually give you comfortable positions. For black I suggest the modern or the carokann because they are also easy to learn and even tho the carokann is technically only against e4 you can still play it against d4 its just called the slav not the carokann.
