What is the easiest opening or defense to learn??

I think from my opinion the Scilian:Dragon Variation is the easiest thing to play.

this is not really a clear question. ruy lopez IS easy to play, if your opponent doesn't know all of the variations. At the same breath, Sicilian Dragon (i prefer classical, but whatever) is somewhat easy as well, as long as your opponent isn't well versed. on the contrary, i would say that many gambits are not the way to start, if you are not willing to memorize the subtleties.

In my opinion, the easiest games for white and black,in terms of both positionally and variations, are Italian game and the hedgehog defence, respectively.

Dragon is not easy to learn! It has lots of things you need to remember. It's very sharp.

The Giuoco Pianissimo is easier to learn.

Queen's Gambit Accepted is pretty easy. It's nice if you want an open game after 1. d4.

I think this discussion is pointless. If you are a midde rated player the openings as such are not that important. The thing is to play 'the opening' logically. A senior rated Scottish player pointed this out to me. Provided you play the opening moves logically and avoid obvious mistakes you will reach the middle game. The game will mostly be decided by tactics after that. Therefore studying openings by rote and memorising lines will get you nowhere and is counter producive. As I was told by this titled player, he has seen lower rated players play the opening flawlessly ten-twelve moves deep but when it comes to actually playing chess he beats them easily. Titled players will agree on this I think.

While I can reel of the opening moves of the Scotch for instance in a number of lines the stronger player will win. It's ok to learn a few basic openings and the moves arn't hard to learn. However I would make the point. Every opening is incredibly complex and difficult to play in practice against tough opponents.

The Colle System is perhaps the easiest white opening for beginners to learn and play well.  Then later go on to King's Indian Reversed (Fisher's early favorite) as it has pretty simple objectives to learn and the same basic opening moves.  As Black you must learn double King's pawn opening (Petroff probably the most bang for buck), and then King's Indian against QP openings (however I like Nimzo-Q's Indian complex better).
