If i'm playing black what is the better way to respond to: 

1. e4 e5  2. Bc4 Nf6  3. Qh5 ...?

What is the better way to respond?

If you have played Nf6 then I'm sure you wont have to worry about Qh5. Other wise that would be a blunder.

If you made a move instead of Nf6, then I'm sure you should play this.

 

Getting your queen out early is usually a waste of time. Black develops early with tempo usually.

NxQ.  I wouldn't think twice about it.  Especially since it prevents the Qxf7 checkmate that would happen if you didn't take the queen.
