In the first game black's c5 makes it harder for black to play d5 (the c pawn can never help from c6 because it's moved to c5 already).
So I would play Bc4 (controlling d5) and then at some point (but not the very next move) I'd want to play d4 to open that file (and now the queen can help control d5) and white just has more space and a nice game.

In the 2nd game you have a choice, you can either advance the pawn or capture it. Capturing then playing Bc4 makes it like a scotch (but with colors reversed, a half tempo up) so taking the pawn would be my suggestion to you.
I'm a bit stumped with what to do next as white in these instances, any advice?
