Pretty sure they have a 1.75" king diameter base so a board with 2.25" squares would be ideal. You could get away with a 2 3/8" board but going smaller than 2 1/4" is asking for trouble.
What size board.
Silicone boards have come down in price so you might want to consider one instead of vinyl or mousepad. Don't have to worry about wrinkles or rolling it up properly. The notation printing isn't quite as sharp and not as many colors, but unless you can't stand the feel (oooh, ick, it feels funny) might be worth it for ease of transport. Someone once posted that it feels like they imagine a corpses skin would feel. Doesn't bother me...
I have that set, acutally a few of them from the House Of Staunton via USCF. A board that has 2 1/4" squares is perfect. The King's base is closer to 1.65" and not 1.75" (as is the Hastings, for example). 2 3/8" would look too large for pieces this size and I wouldn't recommend it.
