I love them all! But I am fond of my rooks.
My personal favorite is the pawns, my sound weird but hear me out they can promote. Theirs 7 pawns I can get seven queens. *by the way I didn’t check the the chess board so don’t attack me if I get it wrong.*

I personally think that the Amazon is a really cool chess piece (it's a fairy chess piece). It is very powerful, being able to move like a queen or a knight.
If we're talking about regular chess pieces, I like the pawn, as it teaches us that even though we may not be capable of much now, we might be in the future.

The bishop.
I can't tell how many times at my level (1400) I win because of my strategic and/or sneaky bishop placements. People have trouble noticing where my bishops are, where they look at and where they can move, especially if they are focusing at my other pieces.
Definitely the knight. You cannot pinpoint exactly where it will move to or what will it do. Also smothered mate is cool af
