why am I stuck at 300? my chess knowledge is growing yet not my elo. what am I doing wrong?

Youve only been playing chess for three or four months. Keep at it and study. Chess isn’t a game you can get really good at it really quickly usually. Keep at it and have fun

Then perhaps it may help you to follow the usual advice that coaches and experienced players give to beginners like us:

1. Play lots of rapid, 15 or 30min games rather than blitz or bullet. Development comes from thinking, and thinking takes time. Play slow games where you think about your moves first.

2. If you already know the basic principles (aim to control centre, develop pieces, castle early etc) then watching YT and streamers is mostly just for fun at beginner level. Spend less time doing that and more time doing other stuff.

3. Low rated games are mostly decided by tactics and blunders. So that's what to work on most. Develop tactics by doing loads of puzzles, from both the website and from books, and try to avoid blunders by slowing down and developing board vision.

4. Learn from your games by spending a little time analysing them and thinking about them afterwards. Don't rely on the engine analysis, do your own thinking in review. Make notes and treat this almost like an academic study.

I looked at a few games, and the common thing I found is this:

You play too fast.

Take a look at this game.

On move 17, you have a ton of time left to figure out if there is a win for you or not (actually there is, but that is besides the point). Instead of trying to find a good move, you played 18. Nxd2?? in 2 seconds, allowing mate-in-1 for your opponent.

What you should do is slow down, use your time, and try to play good moves. Growing in chess knowledge will not help you, unless you use it right there at the board.
