Most people don't take that long and usually have several games going at the same time. It lets you use the DB for your openings so you get to a playable middle game without getting immediately crushed. Some folks have dozens (or even hundreds ) of games going on at the same time so every time they log on, there are games to play. Yes, it's a little like going to the library and researching a paper for school if you want to play at a high level, but lots of folks like trying to craft a perfect game. You're right though, it's not for everyone, although it's a little harsh to call something boring if you've never tried it...
Why do people like 1day per move games?

Most Daily players make several moves per day. I've completed many games in a single day. The format suits people who dont want to play blitz and dont have time for rapid - often players with full time jobs and families who dont have the energy for a full game once the kids have gone to bed 🥱🥱🥱
I like them. If you keep a couple going it makes things interesting. The quality is usually much better and most people will play more than a one move a day, especially in the opening.

I think that such games are pretty boring and can be endless and lasting for months. I have never played such a game so far and I will probably never do it in the future as well.
1 day per move is fast.
Try playing real correspondence chess at the International Correspondence Chess Federation! 10 moves in 50 days. Every 10 moves you get 50 more days added to your clock! I have games still going that started in June!
Thing is, unlike blitz or rapid, you play 25 or 50 or 100 games at a time, depending on your comfort zone. I currently have 30 games going, but was as high as 68, and have many events starting up in the 1st quarter of 2021 that will put me near 100 games if no other game finishes before end of March (of course, some will).

I like the slower paced games because I have a full time job that needs my attention before I can spend any of it on chess! I can't be all "sorry boss, give me a few to finish up this task, gotta take this guy's queen first"

The slow play suits me great with working patterns. Also, I don’t k ow why but I love sitting at the chessboard, sometimes 15+ mins and not necessarily making a move. It gives me much more time to “plan” out ideas without the time pressure of classical chess.
Blitz is certainly popular but not for everyone. I for one don’t enjoy blitz and although o do love classical time controls, happy with single games lasting 90 mins for example, it fits in with my life style.
Although I am quite new to correspondence chess, I see this being the way I go from now on.
Just my 2 cents worth.

It's the modern equivalent of correspondence chess. Players try out openings and moves from databases.
people usually play lots of 1 day games at once. imagine you have free times between your works, you check games and play available ones, spending 10-15minutes top. while having your tea or coffee.
at least thats how i used to play daily games.

I like one day games as it gives me enough time to find better moves and play better games. It is rare that I play someone who only makes one move only every 24 hours. That said, I find it irritating when someone has 30+ games on the go and only move when their time is almost up, every time.

there is a notification for timeouts, maybe they just respond to that calls.

True chess is about finding the best move. That needs deep thought which requires time. 1 day / move gives us that. If you really want to improve your game, this is the mode you should play in. One game that involves deep thought will improve you much faster than a thousand fast games played with shallow thought.
