Why play the book move?

If white plays the book moves against the Caro-Kann Classical Variation, wouldnt this only be helpful to black as they can simply get into their desired position they set out to get in?
Wouldn’t it be more advantageous to play something other than the book move, to throw black off and prevent them from getting to the position they want to?
