Why Resign When Ahead?

Played a game today and opponent had achieved a very significant material advantage by time we got to the end game. Opponent could have easily won, but chose to resign giving me the game. Why do people do this?

Regardless of whether I am winning or not, if I have to unavoidably abandon a game, I generally resign out of courtesy.
