You're not missing anything — at the moment, the iPad version of “Play Against Coach” doesn’t offer a visible difficulty adjustment slider like you’d find on desktop or browser versions. Right now, the coach difficulty is preset per character (e.g. Mae has a fixed strength level), and unfortunately, there’s no built-in submenu on iPad to tweak that manually.
Hopefully, Chess.com will expand mobile functionality in the future to include difficulty options — it's a popular request!
In the meantime, if you're looking for a different challenge level, switching to a different coach character might help a bit, as they vary in strength and style.

on iPad, when I choose the play against a coach (in this case Mae), at least I cannot find any way to see the coach difficulty level or a submenu to change it. There’s only the board and the usual settings menu for flipping the board etc.
