general instructions - where?

iOS and Android may be a little different but on Android, Live and Daily are just under Play.
Click the + there. You have a couple of options.
There is a time control button on the left, next the the Play button. If you click Play, it will send out a seek for that time control. If you click the time control you can change to your preferred one and then click Play.
You can click Create Challenge to set some additional parameters, instead of taking the defaults, such as rated/unrated, rating ranges, game type, etc.
Finally, you can look at current open challenges, but at least on Android it only shows Daily.

And chess960 is a version of chess where the pieces behind the pawns are placed randomly, with one exception, the king has to be placed somewhere between the rooks. And there's 960 different random positions, that's why it's called 960. And you can castle when there's no pieces between the king and rook, it's just a bit more difficult than in the standard chess. I like it, it gives variation to the game and the openings will be different.

Blitz games are fast playing chess, with about 3 minutes to play. The time controls vary a little up and may be some time adds per move, depending on the time control you chose to play.
Bullet chess is faster, time control is 1 minute, much faster than blitz.
Please, keep posting your questions any time you need, we will be glad to help.

I am trying to find a game where you don't have too long for each move - maybe 10 minutes . I selected what I thought would give me that, but my time seems to get shorter and shorter as the game goes on whereas my opponent's doesn't . Is there something that triggers that? I always run out of time!!!

There is no per move time limit time control for Live.
The closest you can get is to set a short base time control and have a large increment.
