I've never used it but I'd assume that they set up the board to how it would look after the choosen opening.
That doesn't sound fair. If you played the game out, you might not be able to get to thet particular opening.
why wouldn't it be fair? If the other player don't agree he doesn't have to join the game.

starting position allows people to agree on a set of opening moves and start from there! it is for those who like to play themed games.
