5 min vs. 5|5 games?

I play 5 min blitz live chess. Occasionally when down to the last couple seconds, my opponents clock stops counting down while they are making moves, as though we are playing a 5|5 version of the game. My question, Does chess.com match players requesting these two varieties of games? Why does this happen? Has anyone else experienced this?

That wouldn't be fair, would it?

What you have noticed are the adjustments made to compensate your opponent for your lag.
