"zug" means zugzwang. Any black move damages his position in some way.
~ = "any". Nf8~ means "any move by Nf8".
(x) = optional capture. "Q(x)e6" means the Q will move to e6, capturing a piece if there is a piece on the square.
1... = black's 1st move. The paragraph shows a bunch of different black moves, followed by the white mate for that move.
