What should White do?

This is more of an exercise in looking at the whole board than it is a puzzle.  It's also a lesson in how to leave yourself in a poor position if your opponent doesn't take the bait.

Anyone else have ideas on how White could have countered this trap?

How about this?

Good stuff... I figured others would have different ideas.  I liked Bxe5 because of where it leaves black's position ( i.e. Double pawns on the E File and a blocked in G7 Bishop), but Ng3 definitely compels the Queen to flee.

Waiting for the inevitable question.......

He did say that you can still do the bishop trade. Maybe yours is better, because the queen isn't doing much at Qa5, but Ng3 also makes white release his bishop. Depends.

Oh and rainbow, why not Bxd3?
