And a parabola has only one vertex and in this case its the one at the bottom.

Edit: X=0 doesn't work for the vertex in the given function because x could be negative which means the vertex is actually at a negative value of both x and y.

Yes. Exactly. But that's just with parabolas.
There's other shapes and there's 3-d too.
A cube has not just one vertex.
It has eight. And if you stand it on a corner it still has 8.
