ivandh...I believe you are correct sir...nothing like a good strong mustard with most any cheese,...except maybe "blue cheese",...my favorite...

My favorite mustard is Nance's but I haven't been able to get it around here for the last few years. Does anyone know if they sell it in your area ? There is at least two kinds, hot and "sweet and tangy". I've written to the company 3 times but their customer relations suck since they never respond. will gladly pay for cost and S&H if you can find some.

Birdbrain, I like the way you make sandwichs using the butt end of the bread. It doesn't get any better then that. How can people eat white bread ? It is only good as a dessert as in a white bread peanut butter and jelly sandwich which I haven't had in 40 years.

Well, believe it or not, I used to hate rye bread. I never bought it before I read about the limburger sandwich (rye, limburger, onions and sardines). However, I have been growing accustomed to it now.
BTW, my wife has some good ideas for the limburger sandwich too! Her idea: fry bacon and onions together, build the sandwich with bacon, onion, ham, limburger and mustard, toast it panini-style until the limburger melts to hold the sandwich together.
I am also thinking about a sandwich using pepperonis on the limburger sandwich, but these ideas are all under top-secret research with the best Wisconsin researchers:

Anyway, if you have any awesome limburger ideas, please post (with pics if possible). Very interested in finding some awesome ideas for this lesser-used cheese.

That Inglehoffer has a nice flavor, slighty sweet, and medium-strong, with a robust flavor. It is a good brand. Looking forward down the line to trying more of their brand, but you ought to see how many sauces I have in the side of my fridge!

Scut, I have added one ingredient to your concoction for pure Wisconsin bliss - pickled jalapenos! (Of course, pickled serranos will do too)

That's one powerful sandwich. The wife is gone on vacation so tomorrow I go to the store in search of the elusive pickled jalapenos. Another thing I may pick up for a sandwich ingredient is pickled garlic. In my younger days I would make a simple sandwich of good bread (non-white) and those big bell peppers that come in a jar, similiar to pepper rings but all I did was split them and open them up then place them on the bread. The last few I've bought have been mushy soft which makes for a lousy sandwich. So I don't know if it is the brands of big peppers or they just don't make them nice and crunchy hot anymore.
If you find Nance's mustard anywhere please let me know. do you like hot sauce / My wife is on her way to New Orleans and the only request I had was she bring back some of the hottest sauces she can find. I liked habaneros but I've heard of the ghost pepper of India that is much hotter. I'll let you know what she returns with. My lips are already burning just thinking about ghost peppers
