I’ve been watching chess online learning the Sicilian defence for example and they show white making certain moves that black responds too. Black playing the Sicilian defence. No one ever talks about what to do when white doesn’t make the “normal moves” that it would usually make. Can you continue making the Sicilian defence moves if white isn’t playing the usual lines?

You must understand why the 'normal' moves are the normal moves. What is it achieving? And if something else is played then ask firstly what is this unexpected move achieving? Do I need to react to it? The normal move would have stopped me doing such and such...can I do it now? etc etc. In any opening you cannot hope to get a good middle game position by just rattling off a sequence of moves regardless of what your opponent is doing.
