En Passant

I think your confusion might be arising from the fact that you can only play en passant straight away and you aren't allowed to make the capture the move after -so you don't get two bites at the cherry. BUT you can make as many en passant pawn captures as there are pawns. En Passant might only occur in one game in about 20 , so multiple EPs are unlikely. The record number in a game is a good question...

It's best not to think of employing it in a specific strategy. it's just a move. Against people just learning you often have to explain you are not cheating and it does cause arguments. Someone might not know the queen moves diagonally as well as laterally. Amongst stronger players they just know the moves. Are you and your brother OK with the castling rule BTW ?

En Passant is fancy. Whenever it gets done on me, I always and I mean always say..."ooooo fancy!" that's a good stat tho..one in 20 games

Yes, I castle in most games. It keeps the king safe and gets the rook into play, but sometimes it's best not to castle. That decision will come with experience. It's quicker to castle on the kingside because you only have to get two pieces out of the way. Castling quickly is a good rule of thumb when you start chess...

Good question. If the queens come off early then the king in the middle is often OK. Sometimes when the position is closed and pawns interlocked as well you may keep king in the middle. This general rules are useful but as you gain more experience you will know when to break them. You should usually castle in most games and will get into more trouble than not most of the time if you don't !
