because it often is too slow to plug and simplify. Factorising is often much much quicker. And completing the square is also a way to do quadratics that cannot be factorised but are too slow to plug.

that is way to solve quadratics. Its called completing the square, and can be used on any type of quadratics, meaning ones that you cannot factorise can be done like this. Specifically this is an example of completing the square when a != 1.
sometimes it is quicker to use the quadratic formula, but really it is all the same thing.
Why do we need so many ways to solve the Quadratic equation? Using the discriminant and the regular equation is the easiest, so why even bother with the others?
