I like I-80 better, it has straighter and more wide open sections between Nebraska and Nevada. In Nebraska it has the straightest stretch of interstate at 83 miles long without veering from an ideal straight line by more than a few meters.

And speaking of "boring scenery" in Utah, this is absolutely nothing! At least Nevada has more colorful desert brush/distant mountain ranges.
Are you kidding? That's the Bonneville Salt Flats. It would be absolutely nothing if it was just desert. That is one of the flattest and most amazing places on Earth! People have broken speed records on that!
Did you know that a stretch I-70 in Utah from Salina to Green River, a small town known for its melons and has a good Melon Days Festival, has no services for 105 miles? It's the longest stretch of the Interstate system with no services. I've been on it.
