I think you can change your options here? Go to settings ‘live chess’ and under your outgoing challenges you can set the elo difference you are prepared to tolerate. Or am I wrong?

Yes. You can change your settings to play up to only +/- 50 elo rating difference. You can also friend request/ follow higher rated players that play rapid frequently and challenge them when they are online.
The match making in 15+10 rapid games (probably other slower time controls too) is completely unreasonable at higher ratings (~2100 for me). I'm frequently getting matched with players who are far lower rated (over often 400elo less). The game I was given just before posting this was vs a 1250 player. These games aren't interesting, and the higher rated player will get 0 points for the win.
I understand the pool of players is less in rapid than blitz so some compromise is needed but I would much rather have to wait 5 minutes to get a decent game than get matched quickly vs a far weaker player.
