The minus sign seems new. What’s the purpose?

Maybe it's a dash?

In 1-0 it is a dash.

In -1.0 it is not. A dash serves no purpose there. It looks like a minus sign, as if I am being punished for beating a low rated player.

Not as in score, like a dash next to the mode

or maybe it's a visual glitch

I believe this is a bug on the iOS app only and is partially due to the large rating difference.

There's a lot of different things being worked on. Every big and feature gets prioritized and worked based on the priorities.
