does chess dot com have a plugin i can buy or download to organize my games by opening moves, allowing me to see frequency of variations and win loss ratios per opening... problem variations etc.?

That's what the Explorer does. It is available on the web version.
If many of your games are not being tallied, you must write to support@chess.com so that this will be turned on.
