I know we can just agree to follow the line of the previous game to a certain point but that's tedious and prone to mistakes.

You can like that if you play in lichess.org . They let you do it . Even you can make a tournament based the position you like! 😁😅
You could also use it to set up specific famous positions from history and pay those out in different ways.
Not so useful with a random opponent, but with a friend... Why not allow the option?
