They do increment tourneys that are open to everyone for bullet (2+1) and rapid (15+10). Not sure why 3+2 isn't a standard option.

As I understand it, only the exclusive premium player live tournaments currently have time controls with increment. My experience as a premium account user has been that these tournaments always get cancelled due to lack of signups. So although in theory there are blitz tournaments with increment being offered, in practice only non-increment tournaments get played.
Personally I believe that games with no delay and no increment suffer from extremely low quality endgames, as players begin to blitz out nonsense moves to win on the clock. Also, many of us play blitz to prepare for OTB time trouble situations, where a delay or increment would almost always be present. Regardless of the opinion on this, offering a variety of time controls would increase the user experience.
Possibly there are peak hours I am not aware of when these premium tournaments fill with players? In that case I might amend this recommendation - alter the scheduling process or algorithm so that increment tournaments are offered when things slow down. But it may be simpler and more equitable to just offer them on a regular basis.
