Basic Cream Puff Pastry
1/4 c. milk
2 tablespoon butter
1/8 teaspoon salt
3/4 cup of sifted all purpose flour
Combine milk, butter, salt and sugar in heavy sausaepan.
Cook over med. heat until butter is melted and sugar is dissolved;
Add all of the flour. Stir vigogorusly with wooden spoon until mixture is smooth and leaves sides of pan, forming a ball.
Turn of heat,
Add 1 egg beat until well mixed.
Continue adding egga one at a time; mix well after each addition.( An Electric Mixer can be used)
Beat untill smooth, cover lightyly.
Let stand until cool.
Roll out pastry..
Bake on greased baking sheet in 450 degrree F oven for 8 minutes...
Reduce heat to 350 degree F and continue baking for 20 to 30 minutes until dry...
Cool on rack..
Fill as desired...
