For setting them, you should do it so that the first time control ends at 6:00. So, if you are playing G/60, you would set each side to 5:00.

Hello all! I was wondering if it's best to let these clocks run all the way down after playing to reduce wear on the springs. I can't find any solid info on this, some say yes, some say it doesn't matter. Just wondering as I just bought a 1950's MOM chess clock and want to take care of it . Thanks!

Our clockmaker advised me to let them run out. I try to use them one after the other. But still my oldest clock, that I received loudly ticking two years ago, did not work when it was her time. Chess clock collecting is beautiful, just keep it simple or be ready for the maintenance.
Most spring loaded chess clocks from years past have two one day clocks in them. Fully wound, they would each run for about 24 hours. Unless you are using an analog clock almost every day, the main springs should be in their relaxed position most of the time. I put my analog clock away with one side running, and assuming I will not be using it for a while, push the button for the other side the next day - if I remember to.
I am into watches and clocks. Without boring you to death I would say what Martin said about not winding them too tight is the best advice. You don't have to run them all the way down. That could be annoying if the clock stopped. Of course you would just stop both clocks and wind if that happened. You should run your clocks once a month and they will be fine.
