Italian is the GOAT: e4 e5 Nf3 Nc6 Bc4!!
Takes a bit to get to, black has 3 turns to avoid Italian, Spanish and Scotch.
The Italian Game is classic. I used to play it a ton, aiming mostly for the Scotch as white. Now, however, I lean more towards the Giuoco Piano Game. To be honest, I haven’t really experimented with other openings. I really like the ones I listed above. It’s mostly due to minor piece development and pawn structure, plus central dominance. So, at my level, these openings are great.
