I play and love he catalan as white so think it is the type of opening the ppl who play it know what they are doing. Semi slav has worked very well for me.
Slav has the solid pawns on the diagonal. You could transpose into stonewall dutch with f5 later on if the position warrants it. Catalan is just a very strong position in general you have to break down a fianchetto castled position on the King side and fight against a solid queen side based centre. Slav and Stonewall give you queen side space. Stonewall gives you options on the King side. Play solid before you transpose or just one at a time. You avoid gambits if you transpose later.
The Catalan is good and there really isn't anyway to avoid it without completely changing how you play. The KID, Dutch, Grunfeld, Benoni all dodge it (White can still fianchetto but it's different from the Catalan and not mainline except against the Dutch). If you still want the QGD or Nimzo/QID setups you pretty much just need to look at the various ways of meeting the Catalan, whether the 6...dxc4 line which is popular at the top level or a line where you insert an early check on b4.
Slav Defence.. works well..
d4 d5
c4 c6
g3 Nf6
Bg2 Bf5
Nf3 for eg. dxc4 something like that makes the tames the Catalan pressure completely

I will never in a million years play that against someone with 500 rating points more than me lol

Nepo played it against the higher rated Carlsen and nearly won with black.
Nepo is a super GM anyways. I AM NOT
Instead of 7...b5 which probably can be avoided by 7Qa4, can play the more classic 7...a6 8Qxp b5 then neuralise Bg2 with Bb7, and play for c5. Very few club player level players will know, how to make much of white's position.
After 1.d4 Nf6 2c4 e6 3g3 can play 3...c5 aiming for modern benoni.
Catalan is the least club players should be worried about, not playing directly against the king, and in the straightforward lines for black, needing high level positional understanding for white to make any progress.
I'm looking for a weapon against titled players, not club level players. (They are in a club too but they are title)
