In the French you have the Milner Barry, The Alekhine-Chatard Attack, and the Reti Gambit.

for the caro you can transpose into a position that looks like the blackmar-diemer gambit ofter 1)e4 c6 2)d4 d5 3)Nc3 PxP 4)f3

sorry i got nothin on the french except for theres something called the alekhine variation or something like that and for that ull have to look up, sorry

 Here are a couple of offbeat gambit ideas against the French and the Caro-Kann:

Against the French:

1 e4 e6  2 d4 d5  3 c4!?? de (3...dc?!  4 Bc4 +=)  4 Nc3 Nf6  5 f3 ef  6 Nf3.

1 e4 e6  2 d4 d5  3 Be3 de  4 f3 ef  5 Nf3  (this is the Alapin Gambit).

Against the Caro-Kann:

1 e4 c6  2 d4 d5  3 Nc3 de  4 Bc4 Nf6  5 f3 ef  6 Nf3.

These lines are all similar to my favorite opening, the Blackmar-Diemer Gambit ( 1 d4 d5  2 e4 de  3 Nc3 Nf6  4 f3 ef  5 Nf3 (or 5 Qf3).

Grandmasters don't play this stuff, but they can work out pretty well against class players.  And even when you lose, the games are usually a lot of fun!

I suggest the Milner Barry, as you can play it virtually every game and it gives reasonable chances for white.

 The Diemer-Duhm Gambit is the name of one of the gambits that I already mentioned, viz.  1 e4 e6  2 d4 d5  3 c4.  I've played it in blitz with mediocre results.  I suspect that the Alapin Gambit (1 e4 e6  2 d4 d5  3 Be3 de  4 f3) is probably better.
