Bongcloud Sicilian or bongcloud French formations. The pawn structures are always there. But Kf7 or Kf2 are top bongcloud followed by the Sicilian variations.

If you don’t care about a bishop being on c8 the entire game, play the French, because its pretty good. The Sicilian is more active in my opinion, and I play it mostly.

The Sicilian gives more winning chances, but also more losing chances. The French is more solid, but you might receive a few frowns if you play it. As a long time Sicilian player, I am completely unbiased.

The Sicilian Defense usually works well when you have a high enough rating to understand it, and you certainly do.

The French is a little more straightforward in terms of the game plans you can develop from it. After ...c5 you're usually committed to attacking White's Q-side.  I coached a high school team of mostly 1100-1400 OTB rated players and recommended the French over the Sicilian for the reason that they could more easily plan their strategies.
