d5 exd6 line, how?

I was studying middlegame chess strategy and came across this line that I can't understand from the Bonch-Osmolovsky-Baranov from Moscow 1953. I cant' figure out why e5 can eat on d6 if black's pawn is in d5.
Can someone please explain this to me?
