basically, if you play 1. e4?????????? and your opponent follows through with 1. ... c6!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!!, you should just resign.

I also play the Caro-Kann, and have for years. As I play E4, I also play against it. I like to attack the black bishop with an early g4 supported by the queen attacking the bishop. Then, I work to advance all the kingside pawns and eventually force the exchange of bishops. Although this looks risky, played correctly it's perfectly safe and gives white a good king side attack on the Caro-Kann.
