Ideas in the Caro-Kann

Hey chess.com community! I have a question concerning the Caro-Kann, specifically talking about when White blockades the center with e5, why does Black play his Knight to d7, and his Knight to e7? Wouldn't it just be more logical to play c5, and develop the "b" Knight to c6 to put pressure on d4? What is the purpose of the Knight developed to d7?

Because if you directly push c5 then Nc6, Then the bishop will be blocked if black plays Nge7. Wouldnt it be better if the knight was in d7, blocking no piece?

second, you wasted a tempo. you quickly set out your plan even though you're still in the opening part.

Like boymaster says, it's a better idea to develop the king's knight to c6 so the other can go to d7 and no pieces are blocked in. To me this seems like the most harmonious way to put pressure on white's pawn center.
