Here's my suggestion: allow main lines, and then play some theoretical novelties. For example, most of your games will end up in the Najdorf, so play the Adam's Attack:
This move is fairly uncommon, but has its fair share of followers. It has gained good results and is very respectable.
Against other lines, use a database to find somewhat rare moves and then look up the theory, either on chess.com or another site.
