1. a3 (Anderssen's Opening) is a perfectly viable way to start, especially against stronger opponents. Yes, it was a desperation move for Anderssen himself, but he scored 50% against Morphy with it, so don't disregard it. The opening is essentially converting white to playing black, except that your opponent can't put a bishop on b4, which closes off most of the more tactical openings.
Personally, the opening which gave me fits defending when first I saw it was the Breyer variant of the King's Gambit: 1. e4 e5 2. f4 exf4 3. Qf3. The main issues are (1) that 3. ..Qh4+? looks like it should work by consolidating the gambit pawn, but it loses to an avalanche of tactics after 4. g3 fxg3 5. hxg3! gaining at least two tempi on the black Queen, and (2) the White Queen can't be dislodged from f3 without loss of tempo. Eventually, I stopped trying to treat it like a true gambit and became comfortable with prioritizing development over material.
As a player, you are an active participant in the game. You don't have to accept any particular opening, you merely have to recognize when you're still "in the book". If you're bored by 1. e4, don't play e5 or c5 in response. Find an odd opening or defense, and master it. In the words of Savielly Tartakower, "As long as an opening is reputed to be weak, it can be played"... except for Damiano, which loses by force.

For me the only opening I truly hate is the Scandinavian. Honestly there are a lot of better moves to play in the first place, and my opponents never seem to actually play the right way, proceeding to check me once their queen is attacked.

I hate system openings and openings that always play out the same way and lead to boring play. I end up blocking anyone who plays the Scandi or London because I never want to see those ever again. I don't lose to them, I just hate playing against them and want to make sure that I limit my chances of playing against them as much as possible.

Technically its the Paulsen-Euwe Variation where after the advance Black plays 3. ...c5 4. c3 Nc4 5. Nf3 Be7, planning to activate the white bishop later on.

You must spend a lot of time being disappointed.
I hate it when my opponent chooses an opening -- any opening. It demonstrates a lack of respect for my authoritah, to even try to defeat me at all.
